should I make the pie when the pumpkin is turning soft? is that too late? how do you know?
You need a ripe pumpkin - that depends on the types of pumpkin: ‘blues’ versus butternut, for example.
You cook the pumpkin first, usually by boiling, but you can use a microwave, or even part boil, then roast!
The pumpkin won’t cook relatively much while in the oven as the pastry will usually cook fairly quickly. if you don’t want ‘uncooked’ pumpkin, then it needs to be fairly well cooked.
